Yay for October!

I’m so pumped that we’ve made it to October 1st!! My Fall decorations are even more legit since we are in the month of pumpkins and scarecrows finally!

photo(119)Mac is still barking at my cute little scarecrow wreath like it’s bringing the plague or something. Crazy dog.

Anyways, I let myself sleep in this morning, and it felt glorious to get out of bed with 8 hours of solid sleep under my belt! I really enjoy working out in the morning, but I was a complete zombie all day yesterday and knew that sleep was the priority.

The highlight of my morning was waking up to the smell of Dunkin Donuts Pumpkin Spice coffee brewing in my kitchen.

photo(79)YUM! And then my beautiful bouquet greeted me.

photo(118)It’s amazing how big and beautiful these roses were from Katie’s wedding. They are still rocking today too! Love having fresh flowers in my house, but I hate when they die. Hopefully these make it through the week for me.

Breakfast

I feel like I’ve been indulging in my eating ever since the wedding festivities started Friday night. So today I’m trying to keep it light and very healthy for the sake of my waistline and also my grumpy tummy.

photo(116)I cute up a large Gala apple before heading out the door to go alongside my Greek yogurt and Fiber One Cereal. I’m usually a yogurt snob and don’t like Chobani very much, but I really like this Apple Cinnamon flavor!

photo(115)I mixed in the Fiber One cereal for some crunch and to make it feel like more a meal.

photo(117)This breakfast was yummy and had lots of staying power! I had a banana mid-morning, but other than that, I was content til lunchtime.

Lunch

Lunch started with a big salad full of romaine, sugar snap peas, broccoli, cauliflower, and carrots!

photo(120)I then rounded out my noon meal with a non-photographed Lean Cuisine. Yes, I was running behind and barely had time to heat it up. I need to be better about prepping some healthy lunches the night before. This quick and easy processed food has got to go!

October Festivities

Looking at the calendar this month, I’m very excited to for some things we have planned!

  • This Friday, Nick and I are attending a gala fundraiser event for the Breast Cancer Foundation of the Ozarks. We get to dress fancy and dance. Yay!
  • Saturday I’m off to Kansas City with my fellow Jazzercise instructors for our District Meeting. We are staying overnight downtown, and it’s going to be a blast!
  • October 12th I’m running my very first 10K! WOO!
  • Hopefully Nick and I can squeeze in a STL trip to visit his family one weekend.
  • Halloween! and then my BIRTHDAY! Which is technically Nov. 1. But it still counts. 🙂

I hope you all have a fun month planned as well! For tonight, I’m headed off to teach back-to-back Jazzercise classes. Should be a fun one! See you all tomorrow!

Email Excitement

Happy Friday!

This week has gone by in a flash! And this morning came far too quickly as I wanted to get in a little workout before my day began extra early. This meant being at the gym right at 5 and being home by 6 to make it into work an hour early. But I was a champ and made it into work by 7 so I can get to Katie & Jesse’s wedding rehearsal by 5:15 tonight lookin’ all glam and stuff.

Workout

Since my workout needed to be quick, I wanted to keep it super focused and movin’ along. So I started with 15 minutes on the treadmill. I only made it to 1.25 miles…I was dragging my feet for sure, but it got my body warm and I was sweating! I then completed a quick circuit of chest presses, lat pull downs, seated dips, rows, and bicep curls. I need my arms to look good in my bridesmaid dress this weekend! I finished off the workout with 20 minutes on the Elliptical before rushing home.

Breakfast

Breakfast was another batch of Butterscotch Overnight Oats like yesterday, but I actually took time to prepare them last night.

photo(110)They got SUPER thick when I let the mix sit for 8 hours overnight, so I added 1/4 cup more almond milk this morning to soften it all up. I figured this would happen with the pudding mix being involved – so be warned. You’ll need some extra milk fo sho!

I also had a Greek yogurt on the side for extra protein to last me through the morning.

Emails, Emails, Emails!

This morning has been an awesome morning for EMAILS! You know all the annoying emails you get sent to your personal address daily? They usually come from stores you’ve shopped at, websites you’ve visited, etc. I typically spend about 5 minutes each morning clearing all the crap out of my inbox. But this morning my inbox was full of exciting things that I actually wanted to read!

First off, I got this email about the Diva Dash 5K coming to Springfield!

Screen Shot 2013-09-27 at 11.09.41 AMI went a little overboard and immediately forwarded this to all my girlfriends and my entire Jazzercise instructor database. Yes, I’m signing up. Yes, I’m dragging all my gal pals along. And yes, we will be wearing tutus on December 7th!

My second exciting email came in the form of something that is forbidden to me…

Screen Shot 2013-09-27 at 11.09.03 AMAndy’s Frozen Custard.

Pumpkin Pie Concretes are back as of TODAY!! Holy smokes, I am thrilled about this one! Since I’m super lactose intolerant when it comes to ice cream goodies, I never let myself indulge in the sweet stuff. Lactaid pills can’t touch a big bowl of ice cream in my stomach, so I just have to go without. But this is one ice cream item that I absolutely cannot go without each year. As soon as the wedding is over (and my fitted bridesmaid dress is put away in the closet!), Nick and I will be making an Andy’s run asap. Yes, I’ll get a stomach ache and hate myself for a day or 2. But the Pumpkin Pie Concrete is completely worth it.

My third exciting email actually nailed down what I will be doing for my birthday this year: going to see White Christmas the musical!

whitechristmas_02I’m so stinking excited for this! The broadway show is coming Juanita K. Hammons Hall on MSU’s campus November 1-2. My birthday is November 1, and I love this musical! So plans will be easy peasy this year! Tickets go on sale Oct. 4, so I’m hoping to get Nick and my mom and dad to tag along for the evening. Can’t wait!

I thought the email excitement was over until I just receive one more about 1/2 price massages at my normal massage place here in Springfield, which I absolutely love but have been avoiding due to money. PEACE thru Massage is hosting the deal through 417 Magazine – $22 for an hour long massage! So if you’re in Springfield and are looking for a great massage, check it out! I will be purchasing mine asap. 🙂

Whew, I’m worn out and it’s barely noon. I’ll be leaving work early today to get home and fancied up before the wedding rehearsal! My girlfriend Katie has been glowing every time I’ve seen her lately, so I can’t wait to see her and her groom tonight. We are doing a ceremony run through at the park before heading to a different venue for the meal, which is where Nick will be meeting me. Should be a fun night!

Enjoy your Friday and send good thoughts our way…the forecast is looking gloomy for the weekend, and this outdoor wedding needs some good weather!

See you all later!

Butterscotch Overnight Oats

Good Thursday morning! We’re having a sunshiney morning here in SGF, so I hope you’re having the same wonderful weather wherever you may be!

Morning Run

This morning was supposed to be a sleep-in morning for me since I ran last night and have a Jazzercise class this evening…but that didn’t happen. I woke up at 4:52 with a tiny dog on top of my belly. He was just needing some attention I guess because once Mac had me out of bed around 5:15, he settled back down into his own tiny bed. What a turd.

Since I was up, I decided I’d go on an easy run to get some more miles on my new shoes I received yesterday. I started out slow and steady, but my mind was not into the running mode this morning at all. I was fighting with myself the whole run to keep myself going and not turn around. I took 3 short 30-second walk breaks to keep my body going since my motivation was at an all time low. I NEVER incorporate walking breaks into my runs, so I wasn’t too happy with myself. But I finished my run strong and made it to a little over 5 miles in 45ish minutes. I’m hoping after this busy wedding weekend (where my workouts will be put on the back burner), I’ll be able to have a good, strong run on Sunday sometime.

Breakfast

I got home from my run with a few minutes to spare before I needed to get into the shower. So while I cooled off, I threw some not-so-overnight oats together in hopes that the hour in the fridge would be long enough for the oats to soften up a bit. And I must say, it turned out pretty well!

Butterscotch Overnight Oats

photo(103)Into this mix, I added:

  • 1/2 cup old-fashioned oats
  • 3/4 cup unsweetened almond milk
  • 1/2 tbsp chia seeds
  • 1 tbsp Sugar-Free Butterscotch Pudding Mix
  • 1 tsp vanilla

Mix the ingredients well, cover, and let sit in the refrigerator overnight for best results! Although my oats softened up nicely after only one hour in the fridge.

photo(104)The star of this recipe is obviously the pudding mix. I love this flavor, but you could use basically any pudding flavor you like! The butterscotch kick really livened up my breakfast. I can’t wait to experiment with other pudding flavors soon!

photo(103)These oats filled up my belly nicely, and I finished off my breakfast with some hot coffee and pineapple Greek yogurt at my desk.

photo(101)On the agenda for the rest of my day is work, Jazzercise, and paint my nails for Katie’s wedding!

photo(100)I’m loving this color! It’s ‘rebel rose’ from Avon. I’ve already got one coat on, so I’ll do the other tonight and be set for the weekend!

Have a great Thursday! And feel free to comment with your favorite overnight oat ‘add-ins’! I’m always looking for something new for my breakfast menu. 🙂
