Anticipating Snow

Happy Monday to ya! How are we all doing today? It’s been a pretty typical day around here.

I kicked off my morning by teaching a Jazzercise class at 5:40 am. Usually I’m lucky to have two students during my Monday AM class time, but today I had FOUR students! I know it seems silly, but this is the biggest class I’ve had during this time slot! I was shocked and pleasantly surprised! The class definitely pumped me up for the morning.  I love the feeling of getting in a good workout before my work day begins. Some people think I’m crazy for waking up before the sun to run or do Jazzercise, but I love it!

Breakfast

Breakfast was quick and easy today: grab-n-go on my way out the door!

photo(29)After my class this morning, I was starving! I had lots of coffee along with the yogurt, cheese stick, and Clif bar for lots of protein and staying power. I had the banana as a mid-morning snack to tide me over until lunch. The tiny tupperware is full of my vitamins. I’m trying to make it a goal to take all my vitamins every morning this week! I’m a little lazy when it comes to taking all my vitamins, but I know I feel better when I have them with my breakfast. Fingers crossed that this week will help me start a good routine.

As for the rest of day, I’m subbing a Jazzercise class right after work at 5:40 pm. Then I’ll be home by 7 to finish up some things around the house I was too lazy to do last night.

But – most importantly – our first forecasted snow of the season is tonight!

photo(30)It’s supposed to get rainy here with dropping temps overnight, so we may wake up to a dusting of the white stuff.  It’s not a huge chance, but hey, a girl can dream. 🙂 I love snow so much! I’m planning on going for a short run in the morning to catch a glimpse of the snow even though it’s not on my normal training schedule. If I’m really lucky, it’ll still be snowing when I take off around 5:15 am.

Well I hope you enjoy your Monday. Hopefully I’ll be able to report at least a little snow in the morning!

Banana & Peanut Butter Overnight Oats

So it happened. I found a NEW favorite way to prepare my overnight oats!

BPBBanana & Peanut Butter Overnight Oats

Ingredients:

  • 1/2 cup old-fashioned oats
  • 1 tbsp chia seeds
  • 1 cup unsweetened almond milk
  • 2 tbsp PB2 powdered peanut butter (unprepared)
  • 1 1/2 tbsp Banana Creme sugar-free pudding mix (unprepared)
  • Dash of vanilla extract and cinnamon to taste
  • Fresh banana for topping

Combine the oats, chia seeds, powdered peanut butter, and dry pudding mix in a sealable bowl. Stir in the almond milk (or milk of your choice!) until all the dry ingredients are well blended. If you choose to use regular peanut butter instead of a powdered variety, mix it in after the milk. Now mix in the vanilla and cinnamon if you wish! Cover tightly and let the mixture sit in the fridge overnight. If oats are too thick, add a splash of more milk before eating!

photo(76)Yum!! This mix is my favorite yet. It tasted like a heavenly dessert in my breakfast bowl! The fresh banana on top really added a lot of flavor and texture. The only thing that might make this a tad better?? Chocolate. But the strong peanut butter taste was more than enough to satisfy my sweet tooth.

photo(73)This morning I ate these delicious oats at my desk with lots of hot pumpkin-flavored coffee on the side. It was a great start to my work day!

Just Keep Running

Morning Run

This morning started at 5:15 when my alarm went off. I told myself last night that I would wake up early today and get in a fairly long run before work. When that alarm went off, I had every intention of just going back to sleep. I felt like I could sleep for at least 3 more hours! And this isn’t normal for me – I’m the annoying morning person that pops out of bed with a smile on my face. Well not today…

I fought with myself for a moment or two before dragging myself into the closet to find some weather-appropriate running clothes. During my morning runs lately, it’s not cool enough to warrant long sleeves or a jacket, so I’m still just sticking with the standard running crops and bright colored tank. I’m still waiting on the cooler temperatures that should have arrived with October and Fall!

I made it 5 miles and completely wanted to head home. I was exhausted, and my legs were starting to ache. I pushed through the last mile to make my 10K distance for the day…but I didn’t like it! I was so thankful to make it to my driveway after the 52 minute run. I felt glorious afterwards like I usually do. It just took a bit more effort today to get there.

The whole run I had the little song that Dory sings on Finding Nemo in my head, but more running appropriate. Just keep running, just keep running, just keep running, running, running… That movie warms my heart!

Breakfast

photo(121) photo(122)Breakfast was typical today except for this Chobani yogurt. Look at this weird stuff! It was passion fruit flavor and had real passion fruit seeds in it. It was strange but ended up being my favorite part of breakfast! I will definitely be purchasing it again soon! Maybe I’m not such a yogurt snob after all. 🙂

The rest of the day flew by at work. I had a normal lunch with a salad and some scrambled eggs. And now tonight Nick and I are just munching around the kitchen for dinner since I’ve been cleaning and doing laundry. I got nothing done last weekend around the house, so tonight I’ve gotta make up for it! I also decided between 2 different dresses for the Breast Cancer Foundation of the Ozarks ‘Hooked on Dance’ gala we are attending on Friday night. I can’t wait for Friday evening now!
