Meaty Lasagna Recipe

Happy Monday to ya! Hope your week is off to a great start. Mine was slightly better than normal because I had some awesome leftovers to look forward to during my lunch break!

I got semi-crafty in my kitchen yesterday afternoon, and decided that it had been far too long since I made lasagna. So I made sure to pick up some lasagna noodles while grocery shopping, and whipped this baby up!

Meaty Lasagna Recipe

  • 3/4 lb. ground beef (or turkey!)
  • 3/4 lb. ground Italian sausage
  • Garlic salt
  • 1 jar pasta sauce/marinara sauce
  • 1 1/2 cups water
  • 1 box whole wheat lasagna noodles
  • 2 eggs
  • 15 oz. container Ricotta cheese
  • 2 cups reduced fat Mozzarella cheese
  • 3 tbsp. parsley (chopped if fresh)
  • 1/2 cup cottage cheese
  • Salt & pepper

To begin, preheat your oven to 350 degrees. Brown the meats together in a large sauce pan.

IMG_3380Drain off extra grease, add a couple hearty sprinkles of garlic salt, marinara sauce, and water. Let this meaty sauce mixture simmer on low while you prepare the cheese mixture. Stir it occasionally and don’t let it stick!

IMG_3382In a medium size bowl, combine the ricotta cheese, cottage cheese, parmesan cheese, 1 cup mozzarella cheese, parsley, 2 eggs, and salt and pepper (around 2 tsp. of each).

IMG_3385Avoid the urge to taste this cheesy concoction – there’s lots of raw egg in there! Now you can start layering the lasagna into a 13″ x 9″ baking dish. Turn off the heat to the meat sauce if you haven’t already. Begin by pouring about 1 cup meat sauce into the bottom of the baking dish.

IMG_3387Next place 3 lasagna noodles lengthwise on top of the sauce followed by adding 1/2 of the cheesy mixture on top of the noodles, spread evenly.

IMG_3388It’ll look kinda like that! Now do the sauce, noodle, cheese layers one more time. On top of the last layer of cheese add one more layer of noodles followed by the remaining pasta sauce.

Once everything is spread evenly, layer the remaining 1 cup mozzarella cheese over the top.

IMG_3392Now cover the top with aluminum foil and bake at 350 for 45 minutes. OR you can cover it and refrigerate it for a few hours until you’re ready to start baking – this is what I did! After it bakes for 45 minutes, remove the foil and let it continue baking for an additional 10 minutes. Don’t overbake it because your noodles will start to get mushy!

IMG_3394And voila! After those final 10 minutes, you are all done! And your house should be smelling mighty fine. 🙂

IMG_3397And now we have leftovers for days. I love it! It will make lunch prep super fast and easy for the week..or maybe the first part of the week at least.

Chili Weekend

Hey everyone! I’m back! I just woke up from my Sunday afternoon catnap and realized I hadn’t written since Wednesday. Oops! But all is well. Busy lives just never seem to get less busy. 🙂

The end of my week was filled with work and Jazzercise. I was just anxious for the weekend to arrive! Nick and I had plans to attend the Sertoma Chili Cookoff at the Expo center in downtown Springfield on Saturday afternoon! I couldn’t wait for lots of chili in my tummy!

I woke up bright and early on Saturday morning to get in my last long run before the marathon next weekend. 10 miles flew by, and I was headed off to sub a 9:30 Jazzercise class before I knew it. I taught to a full room of 13 ladies with tons of energy, and it felt great! Maybe the 50 degree temps and sunshine had something to do with it?

Anyways, between the run and class I had carved a nice big calorie deficit just waiting to be filled with chili. After a shower, Nick and I headed downtown to let the chili tasting begin!

Mmmm, chili. 🙂 We tasted about 10 different kinds before Nick threw in the towel. I had room for a few more bites! It was a crazy environment though. And we didn’t hang out too much longer.

People everywhere!! We could barely make it from one side of the expo center to the other because of the Huge crowd. It was intense. But we still had a great time seeing friends and sampling chili from local restaurants and businesses. My favorite was from Dublin’s Pass – a local Irish pub. They didn’t win, but I definitely went back for several extra samples from their booth!

Overall, it was a good time! The only down side? Dealing with chili overload today. Our stomachs were not happy with us this morning!

After the cookoff, we went by Ultramax (a local running store) to grab some last minute supplies for next weekend. By the time we were done shopping, we were ready for some real food! It was 4 pm and I hadn’t had a real meal yet for the day. So we stopped by a fresh and healthy Asian restaurant called Koriya. I got the crispy shrimp bowl in the picture and it was delish!

It was full of rice, veggies, and tempura shrimp. I loved it! This restaurant is on the opposite side of town from us, so I’m not sure how often we’ll go back. But I think it’s worth the trip. They have an awesome menu with lots of healthy options!

Tonight I’m just trying to get a rough list together of everything I want to pack for next weekend. The Little Rock marathon is one week from today! By this time in the evening, we should be arriving home. 🙂 I’m so excited!!!!

Mac’s Groom Day

Hey there! Hope your day has been going great. I always love Wednesdays. I do a ‘sorta long’ run on Wednesday mornings which jump starts my mood.

IMG_3345It’s also trash day, which means my house looks extra clean after all the trash has been taken out! And it’s the day the grocery ads come out for the week….I know I’m a nerd, but I love looking at the ads for my local stores. 🙂  Today was made even better by some deliveries that finally made it to my house!

New Rykas, anyone? haha I decided to splurge on my Jazzercise shoes since I’ve been investing so much time and money on running stuff lately. I found these Ryka Hypnotics on sale and had to have them. This is just a preview though. I didn’t even have time at lunch to try them on!

And last but not least, today was slightly out of the ordinary because Mac had an appointment to be groomed this morning at 8 a.m. So that meant he got to leave with momma today!

He loves riding in the car, but always tends to get a little finicky once he realizes that something is up. He obviously knows it isn’t common practice to leave for work with me, so the car ride over to his groomer was filled with panicked/excited whines. And since we were running early, I tried to get some ‘before’ shots of him in the car. He couldn’t sit still…

Crazy boy! But when I picked him up during my lunch break, the groomer gave him a great report and said he behaved like a complete gentleman. 🙂

He is so fluffy and pretty! Mac was also beyond happy to be home, so he decided to rub his face all over everything in celebration.

And now he’s so happy to have mommy and daddy home tonight to give him all the attention he thinks he deserves. 🙂

Tonight we are just relaxing and getting some house organizing done. It’s amazing how cluttered my house can get between the weekend and Wednesday night.

We’re expecting lots of rain and thunderstorms overnight tonight and into tomorrow. I love me some rainy sleeping weather! So I’ve already made up my mind that running must happen tomorrow in the gym. Sigh…oh well. I’ll get some speed intervals in to help pass the time on the dreadmill.
