Crockpot Chicken Enchiladas

Hey there! I have a new delicious recipe for you. And when I say delicious, I’m not just saying that to lure you into trying it out. It’s truly awesome. Nick even says so. πŸ™‚

Crockpot Chicken Enchiladas

IMG_3105Ingredients:

IMG_3096

  • 1 can diced tomatoes with green chiles (keep the juice!)
  • 1 can seasoned black beans (drained)
  • 4-5 large chicken breasts (I used frozen)
  • 2 cups chicken broth
  • 1/2 cup flour
  • Tortillas, shredded cheese, or whatever you want to serve it with!

IMG_3115For spices, you will need:

  • 1 tsp minced garlic
  • 2 tsps chili powder
  • 1/2 tsp onion powder
  • 1/2 to 1 tsp cayenne pepper (for a kick!)
  • 1 tsp cumin
  • 1/2 tbsp parsley
  • Salt & pepper to taste

Directions:

Ok, I know that sound like a lot of spices, but don’t worry. I did a mix-and-match with all of the above spices and didn’t measure a thing. I did a few hearty shakes of each (minus the garlic), and it turned out great. So it does not have to be perfect, nor does it have to include each one!

Begin by layering your fresh or frozen chicken breasts in the bottom of your Crockpot. On top of the chicken, pour in the entire can of tomatoes and the drained can of beans.

IMG_3097Add the 2 cups of chicken broth. I didn’t have a can of broth, so I used one of these with 2 cups of water and it worked great!

IMG_3117Last, sprinkle the 1/2 cup of flour over the whole mixture.

IMG_3099It looks weird, I know. But the flour helps it thicken. Now mix it all up!

IMG_3100That’s better. Add in the spices and give it another good stir. Remember, alter the mix of spices to fit your family’s taste. We like it spicy, so I used lots of cayenne pepper.

Once it is well mixed and spread evenly in the crock, put the lid on and set the Crockpot on high.

IMG_3103Let this cook for 5-6 hours on high or 7-8 hours on low. Give it a stir halfway through to make sure the beans aren’t sticking to the bottom.

When it’s almost time to serve, turn the Crockpot heat down to low and shred the chicken with a knife and fork.

IMG_3111Yum! It should be smelling pretty darn good by now.

Nick and I ate this enchilada-style. We used a slotted spoon to get out the chunks of meat, beans, and tomatoes for the insides of our tortillas.

IMG_3112And then a regular spoon to get the juice only to pour over the tops of our tortillas.

IMG_3114And voila! Dinner ready in a flash. Just roll the meat mixture up in some tortillas and you are set!

IMG_3106Nick had cheese inside his enchiladas, but I obviously opted to have mine plain jane. They were amazing!

IMG_3109But not as pretty once you cut them all up to eat. Ha. Yummy in my tummy!

This recipe took me around 8 minutes to put together in the Crockpot, and then maybe an additional 5 to shred the meat and spoon it out into our tortillas. It was amazingly quick and painless.

Give these tasty enchiladas a try and let me know what you think! You could also use the meat inside some hard-shells to make chicken tacos. Whatever you have on hand will work with this recipe!

Have a great evening and happy cooking!

Mac and his Crackers

Hey everyone! Happy Friday! I hope you’ve had a great day. It’s beautiful and sunny here, despite the cold temps andΒ  20+ mph wind. πŸ™‚

Today started off with a trip to the gym, although I should have probably stayed in bed for more sleep. But when my alarm went off, my mind was immediately alert so I decided to get up and go for an easy workout. I did 1-mile easy jogging on the treadmill, 20ish minutes on the Elliptical, and then completed an upper torso circuit that focused on my back and biceps. I’ve gotten in a run everyday this week, so I needed to do something different besides go pound the pavement today! And the gym did the trick. I was sweaty and happy after my quick and easy workout.

Lunch today was a productive one. I went home to take care of Mac and eat. While I was there, I packed my Jazzercise bag for tonight AND I put some chicken enchiladas together in the Crockpot for our dinner!

IMG_3103(Recipe to come!)

I was rushing around like a mad woman, but I got it all done and back to the office in one hour. I can’t wait to get home tonight and be welcomed with the aroma of dinner already cooked! Plus, I’ll be extra hungry after teaching class at 5:40 pm. Because of my rushing around at lunch, I didn’t eat much other than a Lean Cuisine and a million of these wheat crackers that I’m addicted to right now.

IMG_3102
Mac also loves them. Hence the title of this post. He cries incessantly when I pull the box out of the cabinet!

These are the most legit whole wheat crackers I’ve ever had. You can taste and see the grains in these babies! Plus, they taste a lot better than Wheat Thins and are a lot cheaper. Win! I need to buy more for my carb loading next week.

After class tonight, I’ll be heading home for a lazy night on the couch. I’m going to wake up extra early tomorrow to get my miles in because I have a baby shower to be at by 10 a.m.! Speaking of that….I still have to wrap that gift, too. HA. After long runs, I’m always pretty useless for the rest of the day, so I need to get all that little stuff done tonight. I told Nick I would probably end up napping most of the afternoon tomorrow. He didn’t seem too bothered! I’m excited to get this run checked off the list because it will be my last big run effort before the half marathon in a week! Woot!

Have a great night and start to your weekend. Hope you have some fun things lined up! Nighty night!

500 Miles

Happy Thursday! Hope it’s been a good one for you. Sorry I never checked in last night. I had a completely lazy night at home, and it was fabulous. I got home from work, had a snack, and took Mac for a long overdue evening walk. And it must have really tuckered him out because this morning he just could not wake up.

IMG_3089
This is how he sleeps while I shower in the mornings. We have a large master bathroom, so I just pull his little bed in there while I shower and get ready so he doesn’t whine at the door. He’s usually pretty alert and talks to me as I do my makeup, but not this morning.

IMG_3086He hid behind that toy and tried to keep sleeping as long as possible. Sleepy puppy = adorable.

And on a side note, I found this on Facebook last night.

IMG_3092
Hilarious! And what’s even funnier is that my parents had a baby carrier for my old pug, Molly. She would sit in it for rides on the motorcycle with my parents. Yes, this is completely real, I’m not making it up. And no, I sadly don’t have photos or I would definitely share them. πŸ™‚

500 Miles

This morning I went on my usual Thursday morning run of 4ish miles. After I completed my miles and saved the activity on my Runkeeper app, I got this fun little email.

IMG_3095
I hit 500 miles! How crazy is that?! I know I have logged a lot of miles since I started really running/training in October, but I had no idea it would add up this fast. Surely with this many miles under my belt I can be ready for my first half and full marathons this year.

And speaking of my upcoming races, this weekend will be my last long run effort before my half marathon. You’re not really supposed to do a long run this close to a race, but I have to take into account that my full marathon is 7 weeks away, and I’ll be tapering for that one before I know it. SO, I solemnly swear that after my run on Saturday morning, I will take it easy and rest as much as possible before my race the next weekend!

My week next week will consist of teaching a few Jazzercise classes and running a couple times but at a slower, easier pace. I need to keep my endurance in check without doing anymore tissue damage to my muscles. And also, I’ll be focusing on eating as healthy as possible through the first part of the week and then low-fat carb-loading towards the end of the week. Since this is my first major race, this is all trial-and-error. Yes, I’ve tried to prepare for all of this with my long runs, but races always feel so much different to me! Let’s hope that it’s all in my head and my body just acts like the half-marathon is a normal Saturday morning long run in Springfield. πŸ™‚

I’m off to teach a 6:45 Jazzercise class. Have a great evening, and I’ll see you tomorrow! We’re almost to the weekend! Woot!!
