Feeling Betterish

Happy Friday! I’m so glad we’ve made it to the weekend again. It’s been a good day, and I’m happy to say that I’m feeling much betterish! I’m almost back to normal. I slept for almost nine hours last night which definitely helped. Today I’ve been trying to rehydrate and nourish my body after being sicky yesterday. It’s amazing how dehydrated and malnourished a body can become in less than 24 hours!

Breakfast & Lunch

Breakfast and lunch were both kept pretty light today to help my tummy in the healing process. Oatmeal and fruit + yogurt helped fuel me through my morning at the office.

photo(140)I can’t wait to buy more bags of these and cover them in chocolate for Christmas treats!

So I haven’t had the healthiest day so far (no workout + tons of carbs), but I think my post-sickness body wants it this way. 🙂 My belly is extra stuffed after lunch though. Shouldn’t have eaten so many holiday pretzels!

On the agenda for tonight is a Jazzercise class right after work. Then Nick and I have been invited to a Taco Party at my executive boss’s house for dinner! The party starts at 6:30 pm, and I teach class until 6:40ish. Sooooo, I’ll be rushing home to get Nick and put on some clean clothes so we don’t completely miss the whole party. Our whole marketing department has been invited, along with their spouses, so it should be a good time! I’ll just be a little stinky post-workout.

Hope you all have fun plans for the weekend. It’s supposed to be beautiful here in Springfield! Nick and I have no major plans, so I’m excited to catch up on some stuff around the house and get in a nice, long run on Saturday. Have fun, and I’ll see you all later!

Hearty Vegetable Soup

Hello there! It’s been a weird Thursday for sure. I forgot to publish the post I wrote up last night for yesterday, so I just did that when I logged in tonight. Oops! Confusing, I know. Sorry. 🙂

BUT, the weirdest part of my day happened around noon while I was at work. The day started our normally:  I got in a nice 5 mile run, got myself to work on time, and had my normal breakfast of oatmeal, yogurt, and fruit. But around noon, I started feeling horrible. I was sick to my stomach and feeling light-headed and dizzy. I stuck around the office as long as possible before I headed home for an early lunch.

I drove home like a mad woman and got sick immediately after I walked in the door. I called into the office and put myself to bed for the rest of the afternoon. I slept for about 2.5 hours between getting up to drag myself to the bathroom. TMI? Maybe. But it was the weirdest thing and came out of nowhere! I’m guessing it was from something I ate for breakfast. Anyways, I’m still a little sick feeling tonight, but I’m just being lazy around the house and eating Cheerios to help my body recoup.

And what could be more fitting for getting over sickness than a healthy homemade soup?!

Hearty Veggie SoupI threw this recipe together last night for Nick and I’s dinner, and I have tons of leftovers which is perfect for my upset tummy tonight. Here ya go!

Hearty Vegetable Soup Recipe

photo(120)Ingredients:

  • 4 cups V8 Tomato Juice
  • 4 cups water
  • 2 large potatoes
  • 2 cups baby carrots
  • 1 can green beans
  • 1 bag or 1 can corn
  • 1 can beets
  • 1 can tomatoes
  • 1/2 tbsp minced garlic
  • 3 chicken bouillon cubes

  • 1 1/2 tbsp minced onions
  • 1 tbsp parsley
  • 1/2 tbsp garlic salt
  • Dash of salt and pepper
  • Dash of cayenne pepper
  • Dash of All Spice

Begin by adding the 4 cups of V8 juice and 4 cups of water to a large stock pot on medium-high heat.

photo(117)Put in the 3 bouillon cubes to dissolve in the mixture as it heats up. While they are dissolving, wash and cut up your potatoes and carrots into bite-size pieces.

photo(119) photo(118)Add these veggies into the pot and stir well. These go in first as they will take the longest to cook!

Next you can add in the minced garlic and the rest of your vegetables: the corn, green beans, beets, tomatoes. Drain off most of the liquid from your canned veggies before adding them in. Mix well.

photo(116)Lastly, add all your spices: the minced onions, garlic salt, parsley, salt & pepper, cayenne pepper, and all spice. For the last 2 spices – the cayenne pepper and all spice – you really only need a dash or pinch of each. A little goes a long way! Stir the soup well and kick the heat up to bring it to boil.

photo(113)Once the soup is at a good rolling boil, turn the heat down to keep it simmering, cover it, and let it cook for around 40 minutes. Stir often to make sure it’s still simmering and not sticking to the bottom of the pot. It’s important to keep that slight boil to cook those potatoes and carrots all the way through! You’ll know the soup is ready to eat when the large potato chunks are soft.

photo(111)And this huge pot held enough to make around 10 servings. Meaning lots of leftovers for my lunches during this chilly time of year!

photo(107)Try out this soup recipe soon for a healthy and filling dinner. It takes just around 5 minutes to throw together, and if you’re really strapped for time, try to put it in the Crock Pot for around 3-4 hours. This will be my next experiment!

Feels Like Winter

Happy Hump day evening! It was a long and busy day, so I’m just now checking in. Thankfully I’m home tonight and have time to catch up! Plus I even had time to put together a pot of homemade soup that’s simmering on the stove right now. Recipe to come!

Workout, Part I

This morning I woke up early to get on my workout clothes and head out for my typical Wednesday morning run. On the schedule for today was 5+ miles. The forecast was looking gloomy, so before I even left my bed, I checked out the weather radar. It didn’t look so good! The temps were in the 50’s, but our entire area was covered in green blobs of rain. So I opted to go to the gym to run as far as I could tolerate on the treadmill.

I got through 3 grueling miles before I absolutely had to get off that thing! I did some abs and got in a good stretch before I finished my workout with one mile on the Elliptical. When I headed out of the gym, it was raining and I could tell the temps had dropped. A lot. It felt like Winter had arrived while I was working out! And from the weather forecasts I watched while I was on the treadmill, the cooler temps were going to keep pushing into Springfield throughout the day. Definitely feels like Winter today!

Breakfast

I quickly showered and got ready for my work day when I made it home from my less-than-exciting treadmill run. It was better than nothin’ though! And once I made it to my office, I was hungry for breakfast. I had prepared a batch of overnight oats to bring to work with me. They weren’t my best ever, but they filled me up!

image(5)This new flavor is Blended Orange Creme. If you like orangey stuff, you would love it! I gobbled it up in about 30 seconds flat I’m sure. 🙂

Lunch

Lunch started right when I walked in the door because I was starving! I grabbed the first thing that I could find in my fridge. Hummus!

photo(132)While I had lots of this stuff with baby carrots, I made a quick wrap with chicken, spinach, and spicy mustard.

photo(102) image(6)I put in extra spinach. I was feeling guilty for not having a big salad like normal. It did the trick!

Workout, Part II

The rain cleared up as the day progressed, and the temps kept dropping. This presented the perfect opportunity for me to run outside and try out some of my cold weather running gear. I headed out right when I got home for a quick 4 mile run in the dropping temps. 38 degrees feels a lot different from the 50 degree temps that were here this morning! But the run went by fast, especially since I knew I had a hot shower waiting for me at home. 🙂 This brought my mileage for the day to 7 miles which is all I wanted to accomplish with this second workout. Woot for staying on track with my half marathon training!

Now tonight we’re just relaxing as I whip up a new recipe. American Horror Story has a new episode tonight, too! I probably won’t stay awake through the whole thing, but my DVR will make sure I don’t miss it. Have a great night, everyone!
