Baking Goodies & Deer Hunting

Happy Thursday morning! I hope your Hump Day was a good one. I didn’t have time to check in because….um….I was busy? Not really I was completely lazy and just wanted to bake things and lay on the couch after my work day. Hopefully you were lucky enough to catch some lazy time too.

Yesterday started with a 6 mile run in 19 degree temps! It was COLD to say the least. I stayed mostly cozy in my cold weather gear. My bottom half was cold again though. I’m thinking an outer layer is going to have to go over my cozy running tights. They aren’t so ‘cozy’ when it’s below 30 degrees and dark outside. But like I’ve said before, this whole running thing is a learning process. And I’ve figured out that my quads and buns need a little extra warmth! 🙂

Deer Hunting?

This weekend starts the deer hunting season where hunters can use guns. It’s been bow season for a while, but I guess gun season is where it’s at?? I know nothing about hunting…if you can’t already tell. And Nick is going deer hunting this weekend with some of his old buddies. Needless to say, I’m a little less than thrilled about the whole event.

I have nothing against hunting really. I grew up in a rural, farming community where just about everyone (except my family) went hunting for each season. But the thought of Nick bringing home an entire deer is overwhelming. We don’t have a big freezer to store the meat after it’s processed, and I don’t particularly like the taste of venison. I think it is rather ‘gamey’ and blahh. For his sake though, I hope he gets a big buck that he can be proud of!

Since Nick will be gone all weekend (Friday afternoon – Sunday evening), I thought it was my duty as a loving girlfriend to bake him some goodies to take along on his hunting trip!….Truthfully, I just love any excuse to bake. So last night I made some blueberry muffins….

image(11)From a box though. Don’t get too excited, people.

image(10)Box or no box, they were still delicious, and we each ate one fresh out of the oven.

I wanted to make something else for him, but I also wanted it to be quick and easy since I was feeling lazy. I came across an awesome recipe for Cheerio peanut butter treats on Pinterest!

Cheerio Peanut Butter Treats

Ingredients:

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup crunchy or creamy peanut butter (I used crunchy)
  • 1 tbsp vanilla
  • 5 cups Cheerios

Combine the sugar and corn syrup in a large saucepan over medium heat. Stir often and bring the mixture to a boil. Boil for 1 minute. Remove from heat and mix in the vanilla and peanut butter. Stir until smooth. Immediately mix in the cheerios 1 cup at a time. It will be thick and hard to stir! Spread this mixture into a greased 13 x 9 pan.

image(12)Let cool and cut into into bars just like rice krispy treats!

photo(51)Tiny dogs anywhere nearby will be watching…and waiting. But since there’s no chocolate, Mac did get a small taste.

Nick and I both loved ’em! They are chewy and bursting with peanut buttery goodness. Plus they took no time at all to throw together since no baking is involved. I think I’ve found my new easy go-to sweet treat to take to any food-related get together. Two pans of these babies would feed a crowd for sure!

The rest of my day will consist of work followed by teaching two Jazzercise classes. The 5:40 pm teacher needed to trade classes. So I will be there tonight instead of tomorrow. Yay for having my Friday evening open! This created a quick change in my half-marathon training schedule. Today will be my cross-training day, and tomorrow I will get in a short run before work (hopefully).

And since I have tomorrow night wide open (no Nick + no Jazzercise), some Christmas decorations might start going up around the house! Yes, it’s early. But my calendar is getting busier everyday, so Christmas may come early for my sanity’s sake. Plus the music is already playing all over the radio, so that makes my decorating a little more legit, right? I’m going to think so.

Have a great day everyone! I’ll see you all tomorrow!

Hearty Vegetable Soup

Hello there! It’s been a weird Thursday for sure. I forgot to publish the post I wrote up last night for yesterday, so I just did that when I logged in tonight. Oops! Confusing, I know. Sorry. 🙂

BUT, the weirdest part of my day happened around noon while I was at work. The day started our normally:  I got in a nice 5 mile run, got myself to work on time, and had my normal breakfast of oatmeal, yogurt, and fruit. But around noon, I started feeling horrible. I was sick to my stomach and feeling light-headed and dizzy. I stuck around the office as long as possible before I headed home for an early lunch.

I drove home like a mad woman and got sick immediately after I walked in the door. I called into the office and put myself to bed for the rest of the afternoon. I slept for about 2.5 hours between getting up to drag myself to the bathroom. TMI? Maybe. But it was the weirdest thing and came out of nowhere! I’m guessing it was from something I ate for breakfast. Anyways, I’m still a little sick feeling tonight, but I’m just being lazy around the house and eating Cheerios to help my body recoup.

And what could be more fitting for getting over sickness than a healthy homemade soup?!

Hearty Veggie SoupI threw this recipe together last night for Nick and I’s dinner, and I have tons of leftovers which is perfect for my upset tummy tonight. Here ya go!

Hearty Vegetable Soup Recipe

photo(120)Ingredients:

  • 4 cups V8 Tomato Juice
  • 4 cups water
  • 2 large potatoes
  • 2 cups baby carrots
  • 1 can green beans
  • 1 bag or 1 can corn
  • 1 can beets
  • 1 can tomatoes
  • 1/2 tbsp minced garlic
  • 3 chicken bouillon cubes

photo(115)

  • 1 1/2 tbsp minced onions
  • 1 tbsp parsley
  • 1/2 tbsp garlic salt
  • Dash of salt and pepper
  • Dash of cayenne pepper
  • Dash of All Spice

Begin by adding the 4 cups of V8 juice and 4 cups of water to a large stock pot on medium-high heat.

photo(117)Put in the 3 bouillon cubes to dissolve in the mixture as it heats up. While they are dissolving, wash and cut up your potatoes and carrots into bite-size pieces.

photo(119) photo(118)Add these veggies into the pot and stir well. These go in first as they will take the longest to cook!

Next you can add in the minced garlic and the rest of your vegetables: the corn, green beans, beets, tomatoes. Drain off most of the liquid from your canned veggies before adding them in. Mix well.

photo(116)Lastly, add all your spices: the minced onions, garlic salt, parsley, salt & pepper, cayenne pepper, and all spice. For the last 2 spices – the cayenne pepper and all spice – you really only need a dash or pinch of each. A little goes a long way! Stir the soup well and kick the heat up to bring it to boil.

photo(113)Once the soup is at a good rolling boil, turn the heat down to keep it simmering, cover it, and let it cook for around 40 minutes. Stir often to make sure it’s still simmering and not sticking to the bottom of the pot. It’s important to keep that slight boil to cook those potatoes and carrots all the way through! You’ll know the soup is ready to eat when the large potato chunks are soft.

photo(112)Look at all those pretty vegetables! Even though this soup was meat-free, it was hearty and filled up our bellies!

photo(111)And this huge pot held enough to make around 10 servings. Meaning lots of leftovers for my lunches during this chilly time of year!

photo(109)Guess which one is mine and which is Nick’s??

photo(107)Try out this soup recipe soon for a healthy and filling dinner. It takes just around 5 minutes to throw together, and if you’re really strapped for time, try to put it in the Crock Pot for around 3-4 hours. This will be my next experiment!

Hope you’ve had a great Thursday, everyone. Fingers crossed that I feel back to normal tomorrow. Stay healthy out there!

Crock Pot Hawaiian BBQ Chicken Recipe

Hey there everyone! How was your Monday?? Mine has been long and productive! I’m thankful to have tonight off from teaching so I could be home to get some things on my to-do list knocked out!

Yesterday was a beautiful and sunny day here in Springfield, but I still decided to break out my Crock Pot! I love my free time on the weekends too much to worry about cooking a big evening meal on Sundays. So ‘set it and forget it’ cooking is a must!

On Sunday morning I hopped on Pinterest to find a recipe for some Crock Pot chicken that used ingredients I had on hand. I pieced a few things together and came up with a great combo that Nick loved!

crockpotchicken2This recipe is just about as simple as can be!

Ingredients:

IMG_2344

  • 4-6 frozen chicken breasts
  • 1 bottle BBQ sauce
  • 1 large can of sliced pineapple in juice
  • 2 tbsp minced onions
  • 2 tsps garlic salt

IMG_2345Layer your frozen chicken in the bottom of the slow cooker. Then pour about half the bottle of BBQ sauce evenly over the chicken.

IMG_2346Sprinkle the minced onions and garlic salt on top of the BBQ sauce, and then layer the pineapple slices on top.

IMG_2347Pour any remaining pineapple juice over the top of the pineapple. Lastly, pour the remaining BBQ sauce over the top of the pineapple layer and cover it.

IMG_2350Set that baby on low…

IMG_2348And let it cook for 4-6 hours. It should start looking like this!

About 4 hours in!
About 4 hours in!

I gave it a good stir around the 4 hour mark, and then let it continue cooking for 2 more hours.

IMG_2362It’ll be nice and dark when it’s all ready to go! It’s amazing how well the pineapple slices hold up and actually soak up a lot of the BBQ sauce. They ended up being Nick’s favorite part! I served the chicken in whole breast pieces with a pineapple slice or two on top with some extra sauce as well.

photo 5Lots of chicken and pineapple chunks on my plate! Along with a few veggies…

photo 2The chicken turned out extra tender and was a big hit! I made a large batch so we would have leftovers to eat on this week.

photo(85)Yum yum yum!! This recipe was wayyy too easy. I think next time I make it, I’ll use crushed pineapple and shred the chicken at the 4 hour mark. Then I can serve the meat on some sweet Hawaiian rolls for a tasty meal that could feed a crowd!IMG_2362Whip up this easy and tasty meal the next time you’re in a bind for something different and quick!

I hope you enjoy slow-cooker cooking as much as I do. It’s a big staple around my house, especially during this time of year!

Have a great evening everyone. Comment and let me know how your Crock Pot recipes are turning out! Nighty night!
