Car Wash & Chia Seed Pudding

Hey everyone! Happy Friday to ya. Are we starting to feel a little bit Irish yet??! Yeah, me neither. But I am sporting some green at work to get me in the spirit for our weekend festivities.

Last year on St. Patrick’s day, Nick and I went to eat at Dublin’s Pass, an Irish pub in downtown Springfield. And this year Dublin’s is hosting the race I’m doing on Saturday morning. We pretty much love that place and their food. So I’m keeping my fingers crossed for a pretty good spread of food after the 15K on Saturday morning!! It’s never too early for smash patties and bangers & mash right? I guess they could serve some Irish breakfast food too. 🙂 after 9.3 miles, I’ll probably eat anything!!

Last night I decided to finally go get my car washed. It has been coated in about an inch of salt and grime since the bad weather in Arkansas hit while we were there for my race. I thought Mac needed to experience his first auto-car wash too.

I attempted to video him in the car, but he was too freaked to sit still. But it was pretty darn cute to watch his hysterical little face when the power wash and rinse started!

He spun in circles on my lap and cried hysterically. But he was still happy on the drive back home. Anytime he gets to ride in the car with the window down, Mac is one happy dude.

Chocolate Chia Seed Pudding

When we got home, I was craving chocolate but I knew I needed to eat fairly healthy. My tummy was already upset from the crap I had been eating all day. So I whipped up some easy chocolate chia seed pudding that I’ve seen so much around Pinterest!

Warning: it looks gross and weird, but it’s healthy and pretty legit if you’re craving chocolate! I mean, I would rather be eating a fatty piece of chocolate cake, but let’s be honest – summer is coming and we can’t all spare the extra calories of sweets right now!

Mix together 8 TBs chia seeds, 2 cups of your favorite milk (I used almond), 1 tsp vanilla, 3.5 TBs of cocoa powder, and a couple TBs of your fave healthy sweetener. I’m a big fan of Splenda, but I know a lot of people hate it. I had to use about 4-6 Tbs of the stuff to make it sweet enough. Use sugar, honey, stevia, whatever, and add more to taste!

Looks gross… I know, I know. But it’s actually GOOD! And super duper healthy! So give it a try the next time your sweet tooth kicks in. Once you mix it up, it only takes about 20-30 minutes to thicken up in the fridge. I’m still working on this bowl. It makes quite a bit! It’s amazing how much those little seeds can grow!

I hope you have some fun plans for St. Patty’s day this weekend. After my race, there will be a big block party downtown in Springfield from 12-7 with food, drinks, and local bands playing. So I think after my run and a quick shower, we’ll head back for some lunch and fun times! I’m most excited for the Shamrox 15K though! The weather is looking gorgeous – sunny and upper 40s – so it’s going to be a great little race!
